2. Make an easy ahi tuna poke bowl recipe
When you think of Hawaiian cuisine, your mind might drift to a vibrant açaí bowl filled with fruits that mimic the colors of a Hawaiian rainbow. Or maybe you're already salivating over thoughts of a heavier-than-you-thought-it-would-be Hawaiian plate lunch, with succulent pork kalua, crispy chicken katsu, and a glorious scoop of Hawaiian macaroni salad. *See very important tangent below.
VERY IMPORTANT TANGENT: If you haven't had the pleasure of indulging in the mayonnaise-based blessing that is Hawaiian macaroni salad, it's high time you get yourself to Hawaii or locate a salad bar at any all-you-can-eat buffet in the Midwest. Only you can decide which trip to prioritize.
Ok. Time to get back on track. For today's culinary adventure, we're shining the spotlight on another truly delicious Hawaiian gem: the poke bowl. Originating in Hawaii, poke (pronounced poh-keh) was first crafted by indigenous fishermen who enjoyed raw reef fish seasoned simply with sea salt, inamona (a relish made from candlenuts), and limu (edible seaweed or algae). While mainland poke bowls often come piled high with colorful toppings, we’ve learned that leaning a bit closer to tradition and allowing the fish to shine with a simple marinade is the key. Here, we’ve opted for ahi tuna because, well, it just seems right to eat it raw.
It goes without saying (but hey, this is the internet, so we'll say it anyway) that you'll need to snag sushi-grade fish from your trusted grocery store, fish market, or nearest ocean to whip up this dish. EASY AHI TUNA BOWL RECIPE
(Serves 2-4)

Time Commitment: 1 hour 20 minutes
15 minutes to prep
1 hour to marinate
5 minutes to assemble
FOR THE AHI TUNA POKE:
1 lb sushi-grade ahi tuna, diced into bite-size pieces
3 green onions, thinly sliced
1/4 large sweet onion, thinly sliced
3 tablespoons soy sauce (here is a great version that’s made in Hawaii) or tamari (for gluten-free)1 tablespoon toasted sesame oil
1 teaspoon toasted sesame seeds
1 teaspoon macadamia nuts, finely chopped
1 teaspoon Hawaiian sea salt3/4 teaspoon crushed red pepper flakes (optional)
FOR THE RICE:
1 cup short grain white rice
3 tablespoons rice vinegar
1 teaspoon sugar
1 teaspoon salt
TOPPINGS:
Diced cucumber, avocado and furikake seasoning are great toppings.
Wasabi mayo can be a fun addition too, but we recommend not adding so many toppings that the flavor of the ahi tuna is diminished. It's the star of the show! -
In a mixing bowl, combine the diced ahi tuna, sliced green onions, sliced sweet onion, soy sauce, toasted sesame oil, toasted sesame seeds, chopped macadamia nuts, sea salt, and crushed red pepper flakes (if using).
Mix gently until well combined.Cover and let marinate in the refrigerator for 1-2 hours to allow the flavors to meld.
While the tuna is marinating, rinse the rice in a sieve for 1-2 minutes until the water runs clear.
Cook rice according to package instructions.
Allow rice to set after cooking, covered, for 5-10 minutes.Meanwhile, in a small saucepan, heat rice vinegar to a simmer.
Remove from heat and mix in sugar and salt until dissolved.
Place vinegar mixture and cooked rice in a large bowl and toss to combine.To serve, portion rice into individual bowls and spoon the marinated ahi tuna poke over it.
Garnish with toppings of your choice, such as cucumber, avocado, furikake, edamame, wasabi mayo - whatever you like!Serve immediately and enjoy your authentic ahi tuna poke bowl!

BEACH READ: "Shark Dialogues" by Kiana Davenport is a good choice to accompany you to Kauai’s stunning beaches. This epic novel weaves a multi-generational saga as four Hawaiian women navigate their family's tumultuous history. Just remember to reapply your SPF – this is one that may be difficult for you to put down.
4. Watch movies filmed on Kauai
OBVIOUSLY YOU NEED TO REWATCH JURASSIC PARK BEFORE YOUR TRIP TO KAUAI
We do our best to build your anticipation for your upcoming travels to Kauai, but we also know that Steven Spielberg can really do most of our heavy lifting. To no one’s surprise, we are insisting that you watch Jurassic Park (1993) before and after you travel to Kauai. Full disclosure: we also watched it while we were there, and can recommend that, too.
We know that life finds a way to fill your calendar, but we urge you make time to rewatch the best movie ever – or at the very least, treat yourself to a quick dopamine boost by catching the island arrival scene we've included above. We challenge you to watch it without feeling an overwhelming urge to hop on the next flight to Kauai and book yourself a helicopter tour (more on this in the next section).
